Cheesecake
- 1 graham cracker crust
- 1 lb cream cheese
- 1/2 c sugar
- 1 tbs lemon juice
- 2 eggs
- 1 1/2 cup sour cream
- 2 tbs melted butter
- 1 tbs vanilla
Mix cheese, sugar, juice, eggs. Beat in and heat with cream, butter, vanilla.
Bake at 325 for 40 minutes or till set in center. Will be soft, but firms
with cooling. Let cool for 10 min, put in freezer. Serve well chilled.
No-bake no-eggs version
- 1 graham cracker crust
- 1.25 C heavy whipping cream
- 24oz (3 packages) cream cheese at room temp
- 1/4C sour cream
- 1/2 c sugar
- 2t lemon juice
- 1 tbs vanilla
Whip cream, set aside. Mix remaining non-crust ingredients. Fold together,
pour into cooled crust. Chill 8+hr to set.
