Peach Cake
(Works well with other fruit too, especially blackberries)
Dries:
- 2 cups flour
- 1 tbs baking powder
Wets:
- 1/2 cup oil
- 1 cup sugar
- 4 eggs, or 4T flax and 10t (0.5C + 2T) milk or water
- small amount of salt
Others:
- lots of chopped fruit (~9C)
Mix dries and wets separately, then together. Pour over fruit in a
greased 9x13 pan. Bake 375 for maybe 45min until brown and a knife
stuck in comes out without batter.
Note: my family calls this dish "peach cake" regardless of the
fruit. So "blackberry peach cake" probably doesn't have any
peaches.
For an 8x8 pan, use a half recipe.
