Naan

Combine in mixer bowl: Let autolyse for ~20min, then knead with dough hook.

Refrigerate until an hour before you're ready to use it. It will be very wet, which is fine.

An hour before, get it out and let it start coming to room temperature

Heat griddle to medium, oil it.

Pull off a section of dough, flatten onto a floured surface until ~1/4" thick. Put on griddle and cook until golden brown on the bottom. Flip and do the same for the top. If no bubbles, heat may be too high? If not browning, heat may be too low?

Brush with oil or melted (vegan) butter before serving.
