Banana Bread
Preheat oven to 350F; grease loaf pan.
Wets:
- 3 old bananas, blended (or thoroughly mashed)
- 1/3C melted butter (or oil)
- 1/4C brown sugar (reduced from 1/2C)
- 1/2t vanilla
- 2T milk (or non-dairy milk)
- 1/2t vinegar
Dries:
- 1 3/4C flour
- 1t baking soda
- 1/2t salt if using unsalted butter or oil
Mix wets and dries separately, then together. Optionally add 1/2C
chocolate. Pour into loaf pan, bake ~35min at 350F or until a knife
comes out clean.
If you leave out the sugar (which is fine!), add another 1/2t vinegar
to make up for the lost acidity.
Including 1/2C of chocolate chips can be tasty. If you do this and
leave in the sugar it ends up pretty far along the continuum toward
cake.
Older Version
- 1 3/4 cup flour
- 2 1/4 tsp baking powder
- 1/2 tsp salt
- 1/3 cup oil
- 2/3 cup sugar
- 2 eggs
- 2 bannanas, older is better
Mix dries, wets separately, mix together. Bake 1 hour at 350.
